In this assignment, you will write an essay about the Global Food System by involving research/exploration to find information on a staple food and to describe how it is viewed through the lenses of three different societies. For example, you will do research on societies, staple food, and agricultural practices related to the production of the staple food and how the local people consume it. For example, a student could search for Japanese and India, and U.S. perspectives on rice, because the staple food of both countries is rice. In discussing the differences and similarities, you are able to appreciate the importance of rice related to global food security in a new light.
The results of this assignment will be reported in 6 to 8 pages (double spaced, 12 Times New Roman) essay plus a bibliography. The main requirement is that the student choose countries that are compelling and the essay/paper will be scholarly and original. This means that student can use popular sources but also MUST refer to some scholarly sources. At least 5 scholarly sources (i.e. books, chapters, and articles in peer-reviewed journals) have to be submitted for grading.
